The winemaking process begins with a gentle pressing of the grapes, followed by fermentation at controlled temperatures between 14 and 16°C. This careful vinification preserves the grape’s delicate aromatic profile while enhancing clarity and finesse. A brief ageing on the lees adds texture and complexity, giving the wine greater depth without compromising its vibrant character.

In the glass, the wine opens with an expressive bouquet of white flowers, citrus peel and Mediterranean herbal nuances. On the palate, it is fresh, savoury and beautifully balanced, driven by lively acidity and elegant yellow fruit notes. The production process is particularly delicate and precise. For approximately two hours, the grapes remain in a pneumatic press filled with dry ice, a technique designed to preserve aromatic purity and protect the must from oxidation. This short skin contact gently extracts the wine’s elegant pale salmon hue before the juice undergoes a white vinification process aimed at maintaining freshness and aromatic precision.

The result is a rosé of remarkable subtlety and balance. Floral aromas of broom flowers and tea roses emerge first on the nose, followed by a refined mineral freshness. On the palate, the wine is dry, savoury and softly textured, with a medium-bodied structure that enhances drinkability and elegance. The finish is refreshing, persistent and irresistibly Mediterranean.
